What is wrong with the western diet is that we consume far too little omega-3 oils and far too much omega-6 oils. The problem is further compounded by the fact that most of the omega-6 we consume is not very healthy. Omega-6s are like foods at the typical Vegas buffet, not the healthiest, but there’s a lot of it.
Unfortunately most of us get our Omega-6s from highly refined and processed vegetable oils such as safflower, sunflower, soybean and corn. All four are loaded with a refined omega-6, which is devoid of any of the natural health-promoting antioxidants that are naturally found in these oils, and unfortunately because these oils are so overly processed and refined, out, the shelf life is much, much longer.
Now I’m not saying that omega-6s don’t do any good; they do, but the ratio of omega-3 to omega-6 fats in less than optimal and should be improved. Eating the right oils can help avoid deadly diseases. Some of us have been prescribed Vioxx or Celebrex, whose main function is to inhibit Cox-2 enzymes; Cox-2 enzymes create inflammation in our bodies! When our intake of omega-6 fats greatly exceeds our omega-3 fats, the end result is that our Cox-2 enzymes increase and so does our inflammation! Inflammation has been linked to heart attacks, cancer, Alzheimer’s and many other diseases.
So consider all the following when you look at the submenus on this section:
Some saturated fat is good for us.
Omega-3s are very, very, very good for us.
Monounsaturated fats are good for us.
Omega-6s are good for us in balanced amounts and from sources that haven’t been processed and refined to earth.
Reused, which are basically reheated vegetable oils are really, really bad!
Trans fats are metabolic poison and I would say the acceptable level is 0!
